  • oil
    1 tbsp neutrale olie
  • ground beef
    500 g rundergehakt
  • paprika powder
    2 tsp pittige paprikapoeder
  • cumin
    2 tsp komijn
  • pepper and salt
    1 pinch peper en zout
  • carrot
    1 pc winterpeen
  • onion
    1 pc ui
  • bell pepper
    2 pc paprika
  • beans or lentils
    200 g bruine bonen of zwarte linzen
  • tomato paste
    3 tbsp tomatenpuree
  • corn
    300 g mais
  • tortilla wraps
    8 pc tortilla wraps
  • shredded cheese
    150 g grof geraspte kaas

    Verhit een scheut neutrale olie in een grote koekenpan en bak het rundergehakt op middelhoog vuur. Voeg de paprikapoeder, komijn, peper en zout toe.

    Rasp de winterpeen grof en voeg toe aan het gehakt.

    Pel en snipper intussen de ui. Snijd de paprika in dunne repen. Voeg de ui en paprika toe aan het gehakt en bak circa 7 minuten tot glazig.

    Giet de linzen af en spoel af met koud water. Voeg de linzen toe met circa 3 el water.

    Voeg de tomatenpuree toe en bak deze kort mee om te ontzuren.

    Meng de mais erdoor en laat het gehaktmengsel nog een paar minuten zachtjes pruttelen.

    Schep het gehaktmengsel in het midden van de wraps, vouw dicht tot burrito's en kwast vervolgens in met olie en bestrooi royaal met kaas. Zet circa 7 minuten onder de gril van de oven tot de kaas gesmolten is.
