  • beef neck or chuck roast
    2 kg rundernek of chuck roast
  • sea salt
    1 tbsp zeezout
  • black pepper
    1 tbsp zwarte peper
  • garlic granules
    1 tbsp knoflookgranulaat
  • olive oil
    2 tbsp olijfolie
  • white onion
    1 pc witte ui
  • garlic
    3 clove knoflook
  • red chili pepper
    1 pc rode peper
  • cola
    330 ml cola
  • ketchup
    200 ml ketchup
  • raw sugar
    2 tbsp rietjesuiker
  • worcestershire sauce
    1 tbsp worcestershiresaus

    Snijd het vlees in grote stukken en bestrooi het met zout, zwarte peper en knoflookgranulaat. Laat dit 45 minuten in de koelkast liggen terwijl je de barbecue voorbereidt op een indirecte temperatuur van ongeveer 120°C met wat rookhout.

    Leg het vlees op het rooster en laat het zo 2 uur roken tot het een mooie rookkleur heeft.
  • 3
    Plaats een Dutch oven boven directe hitte en giet daar wat olijfolie in. Fruit de ui en knoflook tot deze zacht en transparant is.

    Voeg de rode peper, de cola, ketchup, suiker en de worcestershiresaus toe en laat dit iets opwarmen. Doe dan het vlees erbij en sluit het deksel.
  • 5
    Controleer na ongeveer 2 uur hoe zacht het vlees is. Als het zacht genoeg is, mag de pan van het vuur. Anders sluit je weer het deksel en kijk je elk half uur daarna.
  • 6
    Als het vlees en de saus iets is afgekoeld, trek je het vlees uit elkaar met twee vorken.
